Paleo Lunch Ideas!

Finally, we’ve had a few moments to take Marcelle’s delicious Melon and Cucumber Soup recipe (originally snapped on Facebook) and share it here with you. This is a quick and easy meal, very tasty, totally good for you and perfect to bring along on a picnic. It might be the first of September, but we have a glorious long weekend ahead of us. So grab your blender, visit your favourite grocery, market, or garden and whip up a cool lunch for this hot week.

Prep time: 20 minutes

Cook time: 2 minutes

Ingredient list

  • Organic Cucumber, one
  • Golden melon, one
  • Red onion, one quarter, peeled and chopped
  • Organic ginger
  • Fresh mint to taste – a couple springs will do!
  • Organic coconut milk, one can
  • Lime, juiced and added to taste. Typically three words, but taste as you add.

Prep your ingredients. Add all except the lime juice into a blender. Blend on high until liquid. Now, add in some of the juice. Blend, unplug the blender, taste. If you feel it needs more lime, add it. Basically, play with the flavours until you go, “YUM.” Then it’s ready to serve 😉
